The 'magnet' test will only tell you if you have an austinitic stainless
alloy (300 series). There are other series' of stainless alloys that ARE
ferromagnetic (will attract a magnet), such as the 400 series. In other
words, if it has the basic appearance of steel and does not attract a magnet
then you are 99% likely to have a 300 series (303, 304, 316, etc), but if it
does attract a magnet, it still MAY be stainless. A side note: the 300
series alloys are not heat treatable at all (in fact the 'proper' way to
anneal 300 stainless' is to heat them red then quench in water) but the 400
series are, but 300's can be hardened by cold working them.
Just a little useless trivia.
