M1028 CUCV questions

I recently acquired a M1028(cheap) from the DRMO. The body is in great shape
no rust or dents. The problem is the truck was almost completely stripped of
everything that was removable inside the cab and under the hood. The engine
is still in the truck but the manifold has been removed. The rest of the
running gear is complete. The entire dash including the odometer has been
removed. There are wires everywhere. Every fuse in the truck has been
removed.

My questions are: Does anyone have any suggestions on how to sort the wiring
out? And What would be the feasibility of converting the truck to a 350 chevy
motor? Would it be best to just have the 6.2 diesel refurbished. The 6.2 is
not frozen up and looks to have low mileage. I would like to repair this
truck and avoid parting it out.
