My wife and I ran a welding business for a number of years, and
had a number of fabrications involving galvanized. You do need to
be very careful, as you can get "welder fever"; you don't want it.
What worked like a charm was to immerse the end of what
needed sparking (or the whole object if it was small) in a tub of
vinegar overnight. It takes the galvanize right off back to bare steel.
Then wash it off and dry it, and weld away, but make sure to paint it
again because now it'll rust.
I used to be Costco's best customer for gallons of vinegar.
