Due to the metallurgy of cast iron, cylinder bore wear rate dramatically
increases if your engine is operated below 160 degrees fahrenheit.
There are numerous other reasons to keep the thermostat in the engine.
A hotter engine encourages the evaporation of moisture that condenses
in the engine. Also, most engines run most efficiently between 180 and
210 degrees Fahrenheit. Cooler is not always better.

Here's a vote for leaving the thermostat in. It's there for a reason.
Without it, water flows through the radiator to quickly and doesn't have
time to cool. Result: overheating.
