There is an electrical RPM sender near the rear of the engine block,
up on top, and accessible through the engine access cover in the cab.
It's a rectangular white plastic thingamabob with a couple wires
coming out. It's attached to the big, round diagnostic connector in
the cab, and is only used by the STE/ICE-R tester (i.e., it has
nothing to do with normal engine operation). I don't know what sorts
of off-the-shelf items might exist that could use its output, but you
might be able to come up with something if you or a friend are handy
with electronics.
Maybe you could find a mating connector for that diagnostic plug and
make an RPM indicator that plugs into it. Then, you wouldn't even need
to modify the truck at all, and you could just unplug the thing if you
want the truck to look correct for a show.
