What type of truck?
A 12-volt battery at rest should read about 12.6 volts and when charging,
should read about 13.8 to 14.2.
An ammeter is simply a big hunk of wire, electrically speaking. You may,
without fear of smoke, connect the two ammeter wires together, eliminating
the ammeter, to determine if it is the cause of trouble. In your case, it
appears that it is NOT the cause. Your generator (alternator?) is not
putting out. The voltage drops because of the ignition and other operating
loads. The engine stalls because it is running on battery, hence the removal
of battery wire kills the engine's ignition system.
